The yeastless loaf – Beer Bread Recipe

Loving bread is one thing… making good bread is another… There are all those little yeasts to keep happy… and they grow on their own schedule, which takes time…
So – for those who like fresh warm bread – but don’t always have the hours required to dedicate to the art… give some Beer Bread a try!It’s simple – it’s easy – start to finish – including the clean up is 1 hour for a piping warm loaf of tasty bread. (Now, I will warn you it’s more of the banana bread consistency – but still yummy none the less).

Basic Beer Bread Recipe

3 c. unbleached flour

1 T. sugar
1 t. sea salt
1 T. “new” baking powder
2 T. chopped herbs (or 2 t. dried – selection changes taste)
1 c. grated cheese (select cheese type to impact flavor – cubes work too)
12 oz beer (lighter beer – lighter flavor – darker beer – stronger flavor)

Fire up the oven to 375 degrees before you do anything else – this is that quick to prepare. Combine everything except the beer in your stand mixer bowl – or for the less fortunate, a large mixing bowl. Mix all dry ingredients together. Next, stir in beer (pour with minimal head). Mix only long enough to have everything combined. Spread thick batter with spatula in a greased 8-inch loaf pan, and bake about 45 minutes. Final product will be golden on top and will pass the toothpick stick test.

Just like banana bread – cool in the pan for 10 minutes. Serve warm to melt a pat of butter (mmmmm) or at room temperature (equally mmmmm).
